Corn Casserole


Favorite side dish ever.


Corn Casserole

2 cups macaroni
1 can creamed corn
1 can sweet corn - partly drained
1/4 package Velveeta - cut into chunks
1/2 stick butter - sliced (do yourself a favor and use real butter)


In a casserole dish with a lid put all ingredients and mix together, cover and bake in 350 degree oven for 30 minutes. Stir and bake for an additional 15 minutes uncovered, letting the top brown a bit. Enjoy. This goes with everything, fish, meatloaf, chicken, hamburgers, sloppy joes, and it travels to pot lucks perfectly.

I have also combined everything ahead of time and then made in the microwave, my microwave has one of those top browner things, (no that's not the technical term) so I just use that at the end to brown the top. Works like a charm when I am in a hurry.


Can you believe it's November 1? This year is going by much too quickly. We have one more week of PeeWee football left, both Fredonia teams made it to the Championship games! I am so excited for both our teams, they have worked so hard this year and have every right to be proud of themselves. I am hoping that the nice weather we have been enjoying lasts through the weekend.
